Crémant Blanc Brut Nature, is a blend of Chardonnay and Pinot Noir, aged for 12 to 18 months on racks, zero dosage. The base wines for our crémants are fermented using only wild yeasts, then aged in big wooden casks as well as smaller oak barrels (with elimination of the final press juices). Bottling takes place in the Spring, on a "flower" day. The bottles are then stored horizontally to mature on lees for 15 to 18 months. A brilliant pale yellow colour with green tints, enlivened by fine, dense bubbles. The nose is intense and elegant, with floral notes (acacia, hawthorn) and hints of brioche. Fresh citrus, brioche and lemon cream in the move through the palate and onto a lively, sophisticated, harmonious finish. Pair with natural oysters or scallops and cauliflower puree.

The village of Montaigu perched on its rocky peak, is surrounded by two remote slopes, very favorable to the culture of the vine. The qualitative potential is important, so they focus their efforts to highlight this very special heritage.
"We attach a lot of importance to the work of our vines with a constant search and push of work in bio dynamie. Being the only winemakers in the village we are in an ideal environment to do our work and preserve the multitude of indigenous yeasts of the place: micro climate due to remote, presence of slopes, groves, bio diversity of the fauna and flora surrounding, cattle and horses graze next to the vineyards. With a quality grape, no intervention in the cellar! We therefore push the work to the end by respecting the DEMETER vinification specifications, (no addition of oenological products, yeast, little or no S02). The proximity of the cellars allows a minimum displacement, the wine is vinified on the place of production in our old vaulted cellars of the XIIIth century. In order to guarantee the origin of our wines, we only market our harvest. Our commitment is authenticated on the label by the DEMETER logo."
