Adelaide Hills, South Australia
A single steep vineyard at 550m. Whole-bunch pressed with full solids to seven seasoned Troncais barriques and a newish Chassin puncheon. Weekly batonnage for 8 weeks. Settled and carefully gravity racked.A tightly wound cool climate chardonnay which leads with mouth-watering grapefruit and nectarine. Mealy granny smith apples and a fine-tuning of grilled hazelnuts and honeysuckle spice sets the foundation for the almost nettle-like svelte texture. Aromatically evolving between gun flint, bees wax and meyer lemon rind. The palate is taut and precise, and finishes long with powerful elegance. Pair with steamed lemon chicken or Blue-Eye Trevella with a lemon and garlic butter.

The Ochota Barrels tale began on a surf trip along the Mexican west coast in late 2000, where Taras and Amber Ochota conceived the idea to make beautiful, holistic wines back home in South Australia. Taras became an Adelaide University Oenology graduate and developed his craft in numerous vineyards and cellars around the world. They finally settled on 9.6 acres, deep in the Basket Range of the beautiful Adelaide Hills. Sadly Tarras passed awayin 2020. The wines continue to be produced by his wife Amber.
