Vinified by parcel in small thermoregulated stainless vats. Batonnage/lees stirring is included, but not malolactic fermentation. It is aged on its fine lees in stainless tanks for 8-9 months so zero oak.The Tuffo cuvee is intensely aromatic and loaded with flavors of lush quince and apple. It has a wonderful complexity to it, hitting at first with burst of fresh fruit and finishing with some waxiness but a vibrant minerality. This beauty is incredibly food friendly, and is best cosumed with a buttery roast chicken, or slow cooked, top quality pork sausages.

In operation for 3 generations, the estate comprises of 29ha of vines (which are an average of 30 years old) and is located in the town of Vernou sur Brenne in Indre et Loire (37) where Damien Pinon is the grower and producer, along with his wife Ingrid. Their clay-limestone terroir allows them to develop rich, balanced, and fruity wines. They utilise sustainable viticultural management of their thirty year-old vines in accordance to the means of lutte raisonée aka ‘ the reasoned struggle’. All wines undergo wild fermentation and are aged in traditional cellars dug straight into the tuffo (sandstone). No fining or filtration is done before bottling, resulting in rich, balanced expressions of Chenin Blanc from Vouvray.
